About Chef De Cuisine Jason Carroll
“We are very fortunate to receive a supply of fresh seafood daily and I’m always pleased to hear guests comment on how fresh our seafood is” Jason Carroll, Sous Chef, Flying Fish Restaurant.

Originally from Ireland, Chef De Cuisine Jason has worked at various restaurants in the U.K including the 3 star Michelin restaurant, La Tante Claire as Chef de Partie, then took up a similar position in France at the Chateau des Reynats Hotel for two years before heading out to Australia. Chef Jason spent 3 years as Cuisine de Chef at Cadmus Restaurant in Circular Quay, Sydney before joining Peter Kuruvita’s two Michelin star Flying Fish Restaurant as Senior Sous Chef. Peter Kuruvita has also made appearances in the Master Chef TV Series in Australia.

It was not long after, that Peter Kuruvita appointed Jason to oversee his second restaurant at Sheraton Fiji Resort.
