About Sous Chef Mark Todarello

Horizons Restaurant at Sheraton Mirage Resort & Spa Gold Coast is delighted to introduce our new Chef de Cuisine, Mark Todarello. Trained on the Gold Coast and having honed his skills in Melbourne, his new menu is sure to impress.

After spending four years in Melbourne, working for several leading establishments including Langton’s Restaurant, Radii Restaurant and Bar at Park Hyatt and Cosi on Toorak Road, Mark was featured in the Good Food Guide.

Mark has recently returned to the Gold Coast where he spent six years at Royal Pines Resort. During this time, Mark worked in all seven Restaurants in addition to periods in the production kitchens. On qualifying, he spent the final two years in the signature Restaurant PRP’s which won Best Hotel restaurant in Queensland for 2002; the same year Mark won Employee of the Year.

Mark’s new menu features superb modern European cuisine inspired by the best Australian products. We encourage you to indulge in the reinvention of cordon blue and experience uncompromised tastes from around the world.
